I’ve never made any kind of dip in my life. On Christmas Eve, I decided that I would try to make a spinach artichoke dip. We had been enjoying the idea of cooking things in our new Crock Pot so I decided I would try to do this in there. I went to Whole Foods and bought a couple different types of cheeses, some spinach and a can of artichokes. I mixed it all up in the slow cooker and it came out more than perfect. It was way better than I ever could have thought!
I personally suggest serving it with a fresh baguette but there are some people that seem to prefer pumpernickel with it. I suggest if you are making it for a party to put it in a mini crock pot to keep it warm, rather than hardening.
As I previously mentioned, we made this for my family on Christmas Day. There were only 6 of us there so when we left for our holiday, we still had a lot left. We brought the left overs with us. We made several stops in Canada, where we actually ate this cold. It was still delicious with rice crackers or bread. Speaking of our trip, I thought I would share some small details and some pictures. It first took us over four hours to get to Toronto. We spent one night there and then it took us over five hours to get to Montréal from Toronto. On our way back we stopped in Kingston for a night. Even though it wasn’t the fanciest hotel we’ve ever been in, it was still good. I will always recommend Aunt Lucy’s there. Every time we are in Kingston, we stop. It’s such a cute little place. It was an accidental find, once again, for us. In addition, downtown Kingston is extremely cute. We found a brewery downtown and sampled many of their drinks after our dinner at Aunt Lucy’s.
