Ham is a very popular item served for Easter dinner. We decided to go with a baby two pound ham this time. This past Christmas, we thought we would eliminate our typical problem of having way too much ham left over so we bought a small three pound uncured ham from Plum Market. It was meant for just the two of us. We still ended up eating it over several days. I decided to use it for my first French inspired cooking attempt. The original recipe actually uses one green pepper, instead of the three mini peppers I used. I liked the idea of having the added colour by using the three different colours. Overall, I think the recipe came out completely delicious. I hope to just have the ham for just Easter dinner and then use the remaining to make this recipe again.
