Even before I began my diet, cod was always a typical meal for us. We typically baked it and served it with a garlic and mango sauce. One day I was watching TV and I learned about poaching fish. I had never done this before so I decided to give it a try. The fish comes out so amazingly moist. This recipe allows for you to taste the fish rather than masking the fish with a sauce. This meal is probably one of the most simplistic ones I’ve ever made and I served it with an equally simple salad that was topped with Mediterranean dipping oil. You can find several recommended versions of dipping oils in the store. This time we used Private Selections though.
Also I thought I might mention this. When my boyfriend and I started cooking this, I didn’t pay attention to the pan that he grabbed. By the time I saw which pan he picked, it was too late. You will see below that we made a pan change midway through cooking. Make sure that you grab a pan that can be used both on top of the stove, as well as in the oven. You definitely don’t want a pan with a plastic handle on it.
