I don’t normally like to diverge from my plans but I made a last minute change with today’s post. I was planning to do steamed king crab legs for today then crab cakes for Friday’s post but the more I thought about it, I wanted to use this post as a moment to reflect on the Easter weekend. I’ve decided to feature my bacon wrapped scallops today because I made these on Saturday, with the expectation of having some leftover for an Easter appetiser. I made them before dinner Saturday evening and, between the two of us, we ate almost half of them. After dinner, we decided to watch a movie. We left the remaining scallops on the counter and thought we were keeping an eye on them but apparently we were too distracted by the movie. After the movie, we discovered that half of the scallops were missing and we noticed under the table that there were toothpicks laying there. My cat also thought the scallops looked delicious and helped himself to several of them. On the plus side, he was smart enough not to eat the toothpicks but our Easter appetiser was not really enough for everyone anymore. These things are absolutely addictive, even my cat can’t resist coming back for more.
Anyways. Easter was really nice. It was a peaceful day. Christian and I had a great homemade dinner with my parents. I thought I cheated badly on my diet but Christian ate so much, he looked like he was pregnant after dinner and dessert. I still didn’t even feel like eating when I woke up today. I definitely ate way too much. It was really nice to enjoy a piece of pumpkin pie with whipped cream though. I just had a small piece but Christian went for a generous portion of both cherry and pumpkin pie. I wish I could eat the way he does and stay as skinny as he does. It’s just not fair but here is the recipe for the bacon wrapped scallops. Just make sure to avoid your pets eating them. The garlic is actually not a great thing for them to be eating.
